My Milk Coffee Pudding & Coffee Jelly

"Milk coffee pudding" and "coffee jelly" were sold at the recent event, Showa no Machi no Buy Local.

Since the prototyping process was not shown in detail, many customers seemed to think that the product had been outsourced to a welfare facility or similar.
The owner had been working hard until late into the night the day before the event, but it didn't seem to get through to anyone... I think we failed to communicate this point.

I think I'll be making it again in the store in the future, but I thought I'd post the recipe here so you can make it at home too.

My Milk Coffee Pudding

This smooth pudding is made using "My Milk Coffee Base" sold in the store.

Ingredients: Approximately 5 servings
・Milk coffee base 160cc
・130cc milk
・60cc fresh cream
・2 eggs
・Sugar (for caramel)
・Water (for caramel)

How to make it
1. Make the caramel and pour it into a mold
2. Mix the eggs without whisking them.
3. Mix the milk coffee base, milk, and cream and heat in the microwave at 60-70°C.
4. Slowly mix 3 into the eggs.
5 Strain the mixture twice and pour into a mold. Cover the pudding with foil.
6. Place the mold in a tray and pour in hot water of about 8°C until it is 70% full.
7 Cover the tray with a damp cloth and foil and bake in an oven at 150°C for about 30 minutes.
8. Let cool and chill in the refrigerator.

"Milk Coffee Base" allows you to easily make sweet milk coffee by simply mixing it with milk.

This coffee jelly is made with the shop's French blend.
Since it was a hassle to measure out the gelatin, I just used the 5g that came in a commercially available pack.
It's easier if you use gelatin, which doesn't need to be softened.
I made the coffee in a Clever Dripper. If you don't have one, you can strain it through paper or use a French press.

Ingredients
Coffee jelly
・French Blend (coarsely ground) 38g
・380cc of hot water
・Sugar 15g
・5g gelatin

Milk jelly portion
・200cc milk
・100cc fresh cream
・Sugar 30g
・5g gelatin

How to make it
1. Put coffee powder and hot water into a container and let it steep for XNUMX minutes.
2. Strain the coffee to make about 300cc.
3 Mix the gelatin and sugar
4. Pour into a mold, let cool and then chill in the refrigerator.
5. Heat the milk in the microwave
6. Mix gelatin and sugar into warm milk.
7. Mix in the cream
8 Pour on top of the solidified coffee jelly and chill in the refrigerator.

Personally, I preferred the milk-only jelly on top of the coffee jelly, and the regular pudding I tried making.
