
Stores are opening and closing all around
In a book I read before opening my restaurant, there was a line that said, "Taste is not something you can tell by word of mouth." Taste is different for each person, so it's hard to translate it into objective words. It's also hard to remember, so I can relate to this line.
It seems that the Shinano Express will be restored on the 6th, so I should be able to go back to Matsumoto safely for the Obon holidays, but the cafe I was planning to visit there closed at the end of last month. It's been three years and three months since then.
Otonan, which will be closing on the 24th of this month, has been in business for three and a half years. As is often said, there may be some kind of milestone at three years. Incidentally, it is said that 70% of businesses close within three years of opening.
We'll reach that milestone in just two months...
Property, people, health, finances... I'm sure there are many reasons for restaurant closures, but the restaurants that close due to poor management always have delicious food. In fact, it's rare to find a restaurant that doesn't have delicious food these days.
If the reason for a restaurant's closure isn't the taste, then maybe taste is a smaller factor than we thought when it comes to keeping the restaurant open. That's what I think. Of course, I think it's important to improve, but unlike other restaurants, cafes with diverse personalities really do feel like that.
So, what elements do we need to communicate to our customers that will allow us to continue?
As I enter my fourth year, I need to gain a deeper understanding of this...
